Quick Pink Apple Slaw

Serves: 4 side servings
  • 1 apple (I used gala)
  • 1 cup shredded purple (or white) cabbage
  • 3 radish thinly sliced
  • 1 cucumber thinly sliced
  • 1 spring onion thinly sliced
  • 2 tbsp extra virgin olive oil
  • juice of ½ to 1 lime
  • good pinch of salt (buy on iherb or amazon)
  • optional ⅓ cup of fermented shredded carrots
  1. In a large mixing bowl, combine all the shredded and sliced veggies (I used a mandolin to shred and slice)
  2. drizzle over the olive oil and lime juice
  3. add salt
  4. toss gently and check to adjust seasoning
  5. serve immediately
