This turmeric stir fried mince with vegetables is one of the my favourite family dishes. It’s super easy to make, full of vegetables, it can be stored in the fridge for a couple of days or frozen and reheats well (scroll down for food prep and meal ideas!). It’s a cheap meal, portable, works well as a packed lunch and my kids love to eat it! One of our regular meals I make often. I use about 1 third either pork or beef mince and bulk it up with about two thirds of vegetables so it a complete meal on it’s own or your can add more fresh veggies by using it as a filling in lettuce wraps with some asian herbs.

For the vegetables in this recipe, feel free to change it up with whatever you have on hand. Other vegetables that would work really well are cabbage, cauliflower, capsicum (if nightshades are ok), zucchini, choko, daikon radish, bitter melon, jicama and Asian greens like chinese broccoli or choy sum.

TURMERIC STIR FRIED MINCE WITH VEGETABLES (PALEO, GAPS, AIP)
- 500gms (1 pound) beef or pork mince (grass fed, organic if possible)
- 2 large carrots finely diced
- 1 large brown onion finely diced
- 1 small head of broccoli finely chopped including top part of stem
- 3 large cloves of garlic minced
- 2 tsp natural sea salt (I use celtic or pink himalayan) (buy on iherb or amazon)
- 1 tsp ground black pepper (buy from iherb or amazon)
- 1 tsp ground turmeric (buy on iherb or amazon)
- 1 tsp ground ginger
- olive oil for frying or fat of choice
- Dice your vegetables into small even sized pieces
- Heat a large frypan with 2 tbsp olive oil to medium high (cook in 2 batches if you don’t have a large frypan, or halve the recipe, my pan is about 32cm / 12 in – otherwise it will produce too much juice and you will end up with a boiled dish!)
- The heat of the pan should be high enough to evaporate the juices and slightly caramelised the vegetables without burning, I have my electric stove set on 8 out of 9
- Add all the vegetables and spices and stir fry for about 10 minutes or until the onions are golden brown
- If the pan dries out, add a little more olive oil or fat of choice

- Brown the mince evenly and taste, adjust seasoning if needed
- Serve on it’s own, in lettuce cups or wraps, in cucumber boats
- If you don’t eat it all at once, divide into portions and store in the fridge for 2 days or freezer for a couple of weeks
- It can also be filled up in the thermos for day trips or school lunches for the kids

- To save time during the week and make cheap nutritious quick meals, divide into four snap lock bags and freeze for single serve portions, just re-heat in a pan covered and add to your favourite salads
